Logan Chardonnay is crafted as a stylistic alternative to Talbott Chardonnay, and is intended to showcase distinct blocks of Talbott’s Sleepy Hollow Vineyard. Combining 30-year-old Wente clone fruit with a small amount of new clone grapes, Logan Chardonnay exhibits the lush tropical flavors, excellent concentration, citrus acidity and wonderful balance that are hallmarks of Chardonnay from Sleepy Hollow. In the cellar, Logan Chardonnay is sur lie aged in French oak for nine months, before being bottle aged for approximately 10 months. The result is an intensely flavored Chardonnay that is complex, fruit-forward and very food-friendly. Logan Chardonnay is crafted to enjoy upon release.

"It appears consumers can’t go wrong with any 2005 with the word “Pavie” in its name. This outstanding terroir, elevated to Premier Grand Cru Classe status in St.-Emilion’s reclassification, is run with impeccable attention to detail by Nicolas Thienpont, who is assisted by winemaking guru, Stephane Derenoncourt. The 2005 Pavie Macquin may turn out to be this duo’s finest wine to date. This is a moderately large vineyard (37 acres) for the area, and the blend tends to be 70% Merlot, 25% Cabernet Franc, and 5% Cabernet Sauvignon. A black/purple color is accompanied by aromas of charcoal, burning embers, crushed rocks, sweet, pure, blueberries and blackberries, chocolaty creme de cassis, and licorice. It possesses massive concentration, phenomenal levels of tannin, and good acidity, but it is even more backward than either Pavie or Pavie Decesse. A modern day elixir that should prove to be monumental in 15-20 years, it will last for 40+ years.." (WA)

Very deep flavors of sweet cherry and dark berries carry through on the mounting, palate-saturating finish. A massive example of Pavie-Macquin whose thick coat of baby fat is currently making the wine hard to view. This one is going to require a minimum of a decade of patience." (IWC)

A true, highly-spirited champagne, made from a selection of the best crus classes from the Marne Valley: Villers-Marmery, Vaudemange, Bisseuil, Bouzy, Villedommage, Chamery, Nogent and l’Abbesse. The assemblage achieves harmony with Pinot Meunier, Pinot Noir and Chardonnay, a proportion which is subject to slight variations as dictated by the conditions and qualities of the vintage. After disgorging, a subtle dosage brings out its characteristic floral aromas. The wine is aged for over four years in the bottle, sheltered from light and changes in temperature. Over that time, it refines and comes into its own to bring out the best in the fine fruit. Lovely greenish golden colour, with floral aromas and pleasing crispness, characteristics which make it particularly appropriate as an aperitif with hors d’oeuvres, though connoisseurs are quite insistent about finding many other occasions during the day.
