"The 2005 Cabernet Sauvignon is a more closed and restrained style of wine, with firm tannins, Bordeaux-like austerity, but dense ruby/purple with notes of menthol, black currant liqueur, coffee, and a hint of olive. The wine is full-bodied, youthful, tannic, and a promising candidate for long-term cellaring. In fact this kind of vintage at Togni generally means laying the wine away for at least a decade, which is always good advice here. This may be a 30- to 40-year Togni Cabernet Sauvignon." (WA)

"(I tasted a representative blend that featured 20% press wine) Ruby-red. Dusty aromas of blackcurrant, licorice and menthol, with a whiff of bandaid; a bit reduced. Juicy, even a bit tart-edged, with distinctly gamey leather and earth flavors sweetened by dark chocolate. Finishes with dusty tannins and a lingering earthy quality. Will this develop more sweetness and weight before bottling? An underwhelming showing, and not as good as a very early sample I tried last year: today the typical mountain fruit intensity of the Togni wine seems compromised. Incidentally, Philip Togni noted that he has been pressing more gently the past few years, given "the reality that most of our wines won't be cellared for 20 years." (IWC)
