Viticulture/Vinification
The outstanding quality of the 2007 Harvest provided much excitement leading into the winter and Icewine Harvest. Early January 2008 marked the beginning of the harvest and all was concluded by the end of January 2008. This relatively early harvest delivered top quality fruit with ideal sugar levels providing great concentration of flavours and strong acidity for optimum structure and balance. The 2007 Icewine Vintage will stand out as one of the best for overall quality.

Vintage Conditions
Inniskillin Icewine recognized as one of the world's great wines, is a gift from winter to wine lovers. Harvested at the pinnacle of Canada's crisp winter, the grapes are naturally frozen on the vine and picked when the temperature drops below -10ºC. Only a few drops of luscious nectar can be extracted from each bunch, which is expertly guided through fermentation to achieve the rich and alluring specialty known as Icewine.

Tasting Notes
The Gold Icewine reflects lots of intense layers from its short exposure to oak. The peaches and apricot aromas and flavours develop into complexities of marmalade and candied brown sugar as it ages. The ample natural acidity is softened by the oak aging adding a creamy vanilla flavor

Food Pairing Suggestions
The added complexities in this Icewine lend themselves to pair perfectly with Crème Brulee and Crème Caramel desserts, maple flavoured sauces, rich pates and blue veined and cream based cheeses.
